I kind of give up on food during summer. Not give up, give up, obviously – I love to eat and to me, so many of summer's best moments are food-related. Barbecues, fro-yo, ice blocks, freshly-squeezed lemonade... When it comes to cooking, however, I find it so hard to get inspired, especially when it's so ridiculously hot. I make a lot of salads in summer, and also a lot of sandwiches. H1 and I tend to eat fairly light dinners on weeknights anyway, so both those options are a simple, straightforward way to create an easy dinner that involves minimal oven time.
These bacon and peach sandwiches are ridiculously quick to make, taste incredible, and are quite filling enough for a delicious dinner. The sriracha mayo is one of my favourite condiments, peaches are one of my favourite fruits, and bacon is, well, bacon. They'd be great without the bacon also (a note for any vegetarians out there) but if you can keep the bacon in, I recommend it.
